Our products are classes - not hardgoods, nor download only. Is there a way to turn off shipping address during the checkout process?

Yes, you can take a look at web\store\OnePageCheckout.ascx and ThreeStepsCheckout.ascx. Just remove shipping address and then use empty address or billing address during the code behind.
