is it possible to create a coupon or gift cert that will reduce the entire order (including shipping and tax)? I will buy the paid version today if I can do that out of the box or with some minor code changes.

Yes, but from what I can see on the online demo, it appears to only take the coupon or gift certificate amount from the subtotal, not including shipping or tax. Is that correct? Sorry if I am being a simpleton here, but I just want to make sure this will do what I need before buying. EG. A $75 gift cert will cover a $45 item plus shipping and tax.

Coupon code is applied to subtotal before shipping and tax but gift certificate is applied after shipping and tax. Check the following screenshot. You can test it on one of our demo sites http://store.dotarrow.com/cellphonestore2 and use the same coupon code and gift certificate code.
